Vegetarian Vegetable Soup Recipe

A good vegetarian vegetable soup recipe is a fantastic staple for any diet. Many people think that you need to have meat for protein, texture, and taste. Vegetarian Vegetable Soup Recipe
- 1 tsp (15 mL) of vegetable oil
- 2 chopped onions
- 3 diced potatoes
- 3 thinly sliced carrots
- 1 diced turnip
- 1/4 head of cabbage, shredded
- 2 cups (16 oz/500 mL) tomato juice
- 1 tbsp (15 mL) parsley flakes
- 1/2 tsp (2 mL) salt
Put a large pot over medium heat. Add in the oil and saute the onions until they are tender. Add in the remaining vegetables and then put in enough water to cover them. Bring it all to a boil before reducing the heat. Let the soup simmer uncovered for 20-30 minutes or until the vegetables are tender. Blend in the tomato juice, parsley, and salt. Continue to cook the soup until heated through again. This will serve 4-6 people.
